Ingredients:


For the Tart Crust:


1. 1 1/4 cups all-purpose flour


2. 1/2 cup cold, cubed unsalted butter


3. 1/4 teaspoon salt


4. 3-4 tablespoons ice water


For the Filling:


1. 2 cups fresh asparagus, trimmed and cut into bite-sized pieces


2. 1 tablespoon olive oil


3. 1 small red onion, finely diced


4. 3 cloves garlic, minced


5. 4 large eggs


6. 1 cup whole milk or heavy cream


7. 1 cup crumbled goat cheese


8. 1/2 teaspoon dried thyme


9. Salt and freshly ground black pepper, to taste


10. Dash of nutmeg


Recipe Method:


For the Tart Crust:


1. In a food processor, combine the all-purpose flour and salt. Add the cold, cubed butter and pulse until the mixture resembles coarse crumbs.


2. Gradually add the ice water, one tablespoon at a time, and pulse until the dough comes together in a ball.


3. Shape the dough into a disk, wrap it in plastic wrap, and refrigerate for approximately 30 minutes.


For the Filling:


1. Preheat the oven to 375°F (190°C).


2. In a skillet, heat the olive oil over medium heat. Sauté the finely diced red onion and minced garlic until translucent.


3. Add the bite-sized asparagus pieces to the skillet and cook for 2-3 minutes, or until the asparagus is slightly tender. Remove the skillet from the heat and let the mixture cool.
